It straightens but also turns the hairs into a sort of hay almost wirey texture. I use a chi straightener with a heat protector. Is this normal?Is it normal for a hair straightener to do this to my hair?

no. Your hair shouldn't feel like that after using a flat iron even with heat protector in. Your hair could be super damaged or the flat iron could be damaged or the heat protector could be expired and not working.
